Few things are as controversial as pizza. The choices of crust, sauce, cheese and toppings have divided generations of eaters. In Hong Kong, Pizza Hut customers may choose to have their pizzas dressed with Thousand Island dressing instead of tomato sauce. In Italy, a bill before Parliament tries to safeguard the traditional Italian pizza, specifying permissible ingredients and methods of processing.

When food meets politics we cannot content ourselves with a cook. We need consultants, a board of analysts, and a handful of specialists. Today I am talking to SeriousEats.com managing editor, "America’s Favorite Pizza Blog" SliceNY expert, Adam Kuban.
